Honey  in the kitchen

Honey kvass

 

·        800 g of honey

·        9 l of water

·        800 g of raisins

·        two lemons

·        two spoonfuls of rye flour

·        15 g of brewer’s yeast

 

Pour the honey in a large dish; add lemons (previously sliced in thin circles) and raisins. Dissolve flour and yeast in cold, previously boiled water and pour it into the dish. 24 hours afterwards add 1 l of boiled water. When circles of lemon and raisins come to the surface, filter the liquid through a strainer. Pour the kvass into bottles, put 2 or 3 raisins in each, close them up well and store in a cool place in horizontal position. After 2 or 3 days the kvass is ready for use.

 

 

Rose hips vitamin drink

 

·        A spoonful of honey

·        A spoonful of dry wild rose hips

·        A glass of water

 

Wash the rose hips and boil them for 10 minutes. Pour the liquid in a glass, cover it with a piece of gauze and keep in a dark place from 10 to 12 hours. Squeeze the hips and filter the mass through double gauze. Add honey and stir. The drink should be consumed within 24 hours from preparing, before C vitamin dissolves. Two glasses per day are recommended to adults and one to children.

 

 

Lean honey cookies   

·        A glass of honey

·        A glass of oil

·        A glass of sugar

·        A glass of carbonated water

·        Two teaspoonfuls of baking soda

·        Flour

 

Make dough out of all the ingredients. Roll the dough and use a glass to make round shapes. Put the biscuits in an oiled baking pan and bake them. Before baking a piece of nut can be put in the middle of every biscuit.

 

 

Biscuits with raisins

 

·        200 g of honey

·        250 g of flour

·        two eggs

·        one yolk

·        a quarter of a glass of milk

·        100 g of raisins

·        dried grated skin of one half of a lemon

·        a half of a teaspoonful of cinnamon

·        a half of a teaspoonful of baking soda

 

Cocoa frosting

 

·        80 – 100 g of confectioners’ sugar

·        one egg white

·        200 g of cocoa

·        Stir the ingredients until firm smooth foam is formed

 

Whip eggs, yolk and honey. Add flour and milk with baking soda, and stir for 10 minutes. Add lemon skin, cinnamon and raisins. Bake the biscuits for one hour in a deep baking pan previously greased with butter and flour. Take them out from the baking pan while still hot. When they cool down, coat them with frosting.

 

 

Apple sauce

 

·        6 apples

·        a half of a glass of honey

·        a half of a glass of water

·        juice from one half of a lemon

·        3 cloves

 

Peel the apples and slice each in four parts. Pour water, honey and lemon juice in a dish, add the cloves and cook until it boils. Add apples and stew the sauce. Take out the cloves. Serve with pork or chicken.
